I made this on my smoker, lightly smoked (didn’t want to overpowered the taste of the beef). It was the most tender and delicious cut of beef I think I’ve ever had. I’m glad I ordered two of them and am looking forward to making the second one. Now that I know what to expect out of this cut, I’m interested in trying new recipes.
